If we told you about a product at Public Market that is “soy-free, dairy-free and vegan,” you’d probably think we meant Mr. Dewie’s Cashew Creamery. And you’d be right.
But also available at Mr. Dewie’s kiosk are sweets that are similarly out-of-this-world delicious and still vegan! Next time you’re in the Food Hall, stop by and try Cello Chocolate.
The Nevada City-based artisan chocolate maker is not only committed to producing a purer, exquisite chocolate bar. Cello Chocolate owners Ned and Debi Russell are committed to educating others about the process of chocolate making, from bean to bar.
The company prides itself on offering 70 percent cacao, single-origin dark chocolate bars from six different countries—Ghana, Venezuela, Dominican Republic, Ecuador, Peru and Bolivia. Ned and Debi travel and taste throughout the cocoa producing countries of the tropical belt. Their adventures in Costa Rica, Beliza, Ecuador and more are delightfully recounted on their blog.
“We want people to be able to taste the distinct flavors from the beans from different countries and choose the ones they like,” Ned said in a recent article.
Here’s just a small selection of bars from Cello Chocolate:
BOURBON BARREL AGED TRINIDAD 70%|
Rich and creamy with notes of vanilla and honey.

GHANA WITH SEA SALT 70%
Deep, classic, cocoa flavor with Sea Salt.
Sweet & Salty. Certified Fair Trade cocoa beans.
ECUADOR 70%

There are only a few retail locations to purchase Cello Chocolate and most of them are in the Sierras. What a good excuse to visit Public Market and swing by Mr. Dewie’s to experience Cello Chocolate for yourself!
